Chicken & Black Bean Taquitos

So I came across this really awesome site called onceamonthmom.com. I can't remember if I came across it on Pinterest or just through a Google search. Anyways this site is really dedicated to freezer cooking and making practically an entire month's worth of food in one big cooking day. I was interested in trying it out, but my husband and I like our food to taste fresh. We don't even like to eat leftovers. I still check the site out because most of their recipes you can still use, but just skip the whole freezing part. Well I came across this recipe and I knew I could use it and skip the freezing part. This has now become a favorite of my hubby's and mine. Ok so here's how you make these tasty Chicken & Black Bean Taquitos!


Chicken & Black Bean Taquitos

Ingredients

4 boneless skinless chicken tenderloins or 2 boneless skinless chicken breasts, chopped in small pieces
Salt, pepper, and seasoning salt
1/3 tsp cumin
1/3 tsp coriander
1/3 tsp dried oregano
4 Tbsp vegetable oil, divided
10 oz black beans, rinsed and drained
1/4 cup fresh cilantro, finely chopped
1 cup Mexican blend shredded cheese
12 corn tortillas
Cooking spray

Cookware:
Large cutting board
Kitchen shears
Large skillet
Tongs
Colander
Potato masher
Spoon
Baking sheet
Brush


Preparation

1. Preheat oven to 450F.
2. Cut up chicken into small pieces using kitchen shears. Season chicken with cumin, coriander, oregano, and a few dashes of salt, pepper, and seasoning salt.
3. Chop up cilantro. Drain and rinse black beans in colander with cool water.
4. In a large skillet, heat 2 Tbsp vegetable oil on medium heat. Add chicken and cook until no longer pink about 4-5 minutes.
5. Add black beans. Use a potato masher or fork to mash the chicken and beans together until about half mashed (see below for picture).
6. Stir in fresh cilantro.
7. Warm tortillas either in microwave or on stove top to soften.
8. Brush 2 Tbsp vegetable oil on baking sheet.
9. Place about 1 Tbsp of chicken mixture in the middle of each tortilla, top with cheese, and roll tightly. It should resemble a cigar.
10. Place taquitos seam side down on the baking sheet.
11. Spray with cooking spray. Bake in oven for 15 minutes or until crispy. Serve with your favorite toppings and enjoy!

 1. Gather ingredients and cookware.

3. Season chicken with cumin, coriander, oregano, and a few dashes of salt, pepper, and seasoning salt.




 4. Chop up cilantro. You can either use a little chopper like up above or use a knife to chop up the cilantro. I find the chopper easier, but use whatever is your preference.


5. Drain and rinse black beans in colander with cool water.



6. In a large skillet, heat 2 Tbsp vegetable oil on medium heat.



7. Add chicken and cook until no longer pink about 4-5 minutes.



8.  Add black beans.



9. Use a potato masher or fork to mash the chicken and beans together until about half mashed.



10. Stir in fresh cilantro.




 11. Warm tortillas to soften. I use the cast iron skillet up above to heat my tortillas up or you can just use a regular skillet. You can also just place it right on the burner just be careful not to burn your fingers. I usually leave each tortilla on each side for about 30 seconds. You just want them soft so it's easier to roll them.


12. Brush 2 Tbsp vegetable oil on baking sheet.



13. I like to warm my tortillas individually. You can do that or just heat them up all at once. So first I heat up my tortilla.



14. Next, place about 1 Tbsp of chicken mixture in the middle of each tortilla,



top with cheese,



 and roll tightly. It should resemble a cigar.


15. Place taquitos seam side down on the baking sheet. Repeat until mixture or tortillas are used up.



16. Spray with cooking spray.



17.Bake in oven for 15 minutes,



or until crispy.


18. Serve with your favorite toppings and enjoy!
