Menu Plan Monday 5/20/2013



Ok, so I'm starting another series here on the blog!  I think I did something similar to this before, but instead I did it on Sundays. Well, now it's on Mondays and it shall be called Menu Plan Monday! Yea like you couldn't tell that from just reading the title...duh. Anyways each week I'll share what I have planned to make for dinner. So just to let you know, I only plan 4 meals for the week. That is dinner for Monday-Thursday. Friday-Sunday nights we usually eat out for dinner.

Eventually, I may start adding some tips on how to menu plan if you have trouble with that. I would say I've been doing it for about a year now and I honestly love it! It keeps me organized, saves money, and I don't have to constantly answer that dreaded question... What's for dinner? Yes, even though I don't have kids, my husband still asks me everyday. For now though, I'm just gonna start with listing my menu plan for the week with links to the recipes!









Like I said before I thoroughly enjoy menu planning. It honestly just makes the week a little easier. If you are new to menu planning, I suggest you check out Org Junkie! Friday First Impressions: Chicken Arrabiata Pasta

Ok, so apparently I'm subconsciously trying to make my husband like Italian food. I think it may be working.... Last night, I made this Chicken Arrabiata Pasta. So I found this recipe through Youtube. Yep, you read that right... Youtube and not Pinterest. I have a mild obsession with Youtube and I've found a few cooking channels that make really good recipes. Anyways, I figured this would be a good Italian dish to try out on the hubby since it has a spicy red sauce. Pretty much any recipe that is spicy will generally pass the hubby taste test. Alright let's see what we thought about...

Chicken & Peanut Sauce

Have you ever tried Thai food before? Well, if yes then I say this dish is very Thai-esque and if no then I think this is a good place to start! If you have peanut allergies though stay faaaaaaaaaaaaaaaaar away from this recipe. This dish tastes so good I seriously do not know where to start. You have the delicious richness of the peanut butter which is off set by the coconut milk, lime, and spice from the red chili flakes. Ok, I'm gonna stop now before I salivate all over the keyboard.... Alright, let's boogie on into to my kitchen now!

Friday First Impressions: Sun-Dried Tomato and Chicken Pasta


Who doesn't love a good, creamy, cheesy pasta every once in awhile? We generally try to watch our cream and cheese intake, but every once in awhile we just need to indulge. Like most of the recipes I find, I found this one on Pinterest as well. Seriously, that site is sooooo addicting and just makes it easy to find a new recipe to try. Ok, on to the point let's see what Isaac and I thought about this pasta dish!

Hummus Chicken

Alright, so I've finally tweaked and refined this recipe to how my hubby and I like it. If you remember back to my first First Impressions Friday, this was the recipe we tried out. I mentioned I had a few things to change about the recipe which I've done. I think I just changed up the vegetables used in the dish. Instead of squash and zucchini,  I used broccoli and carrots. Ground Beef Enchiladas

Who does not love a good cheesy, beefy enchilada? I know I do for sure. The only problem is that Isaac likes rojo (red) enchiladas and like the verde (green) ones. Luckily I have managed to make these enchiladas to where we both get what we want!

Ok, forewarning, this recipe is a bit more labor intensive. The green sauce is made from scratch, but honestly it is worth the trouble. If you don't feel like doing the work or just don't like green sauce, just substitute red enchilada sauce instead. That's what I use on Isaac's side of the dish. Friday First Impressions: Bacon-Wrapped Chicken

This past Tuesday night was a spectacular night in the kitchen for me! I made an amazing recipe for the first time and it turned out wonderful! I'm quite proud of myself.
