Menu Planning Monday: 6/24/2013


Yep, so just as I'm praising myself for keeping up with blogging, life happens. I didn't blog for the past week and half because of two reasons. 1.) I honestly did not feel up to it and I didn't want to post something just to post. 2.) My grandfather passed away and I needed to just take some time for myself. So yes, we can plan to blog 3 times a week every week for the rest of our lives, but sometimes life happens and we need a break.

Weekly High & Low

Low: In the past couple weeks, I think I've only cooked maybe 3 times. Mainly because I've been out of town.

High: Honestly, the fact that I cooked at least once last week. It's better than nothing!

Weekly Meal Plan



I loved these sooo much a few weeks back that I have to make them again!

Tuesday: I'm at school tonight so it's fend for yourself night.

Wednesday: Once again at school for the night, so good luck hunting for food hubby!


If you love Thai peanut sauce, you definitely should give this recipe a try!

Menu Plan Monday: 6/9/2013




I'm quite proud of myself to be honest. I've been blogging quite regularly for the past two weeks! I think this is the longest amount of time that I've continuously blogged! I've finally come up with a schedule that allows me to blog, work on school, and keep my life sane. Ok, let's get on with this post now.

Weekly High & Low:

Low: I will say I did a bit better as far as actually cooking than last week. I didn't make one meal last week which was the Healthy Burritos. I've given up on making them for awhile now.

High: If you read Friday First Impressions: Greek Turkey Burgers, well then you know that this was our favorite meal from last week! Seriously these burgers were out of this world!!! I can't wait to make them again because they were so good. Just go read that post to know all the juicy details about those burgers!

Weekly Meal Plan

Tuesday & Wednesday: Fend for yourself night
I have clinical til 9:30pm each night so we are just eating dinner on our own these nights. I don't like it, but oh well.

First Friday Impressions: Greek Turkey Burgers

So I know I said last week that the Tomatillo Salsa Steaks we tried last week were by far the best new recipe we tried. Well, yea I take that back.... Lemon Chicken & Broccoli

I've realized that the majority of the food I make either has an exotic flavor or nice good kick of spiciness. Well, every once in awhile I'll take a pretty simple dish and add a nice kick to it. This is essentially what I've done with this dish. Now, if you don't care for the kick then you can simply leave it out and I know this will taste just as good. Alright, let's jump into my kitchen!

Menu Plan Monday: 6/2/2013

Weekly Highs & Lows:

LowSo as far as cooking last week, that did not go so well. I only cooked two out of the four days. Hey, life happens and some times you just can't have a home cooked meal. It's ok though and you just try to do better the next week.

High: The simple fact that I was able to cook at two times last week. I didn't end up making the Black Bean & Spinach Enchiladas because by the time the chicken was done, I was tired and said screw it let's just eat the chicken as tacos. At least, it was a home cooked meal and that always makes me happy!

Alright, so what am I going to try and cook this week!


I don't have a picture for the Greek Turkey Burgers yet because it's a new recipe. Whoo hoo!


Tuesday: Healthy Burritos
Since I didn't make these last week, here they are again. Hopefully they will be made!

Wednesday: At the hospital. I start a new clinical rotation this week and I won't be getting out until late so no need to make dinner. Believe it or not I'm actually quite sad about this.
