Friday First Impressions: Tomatillo Salsa Steaks

If you are new to reading this little ole blog of mine, Friday First Impressions is where I give a review of a new dish I cooked this week. I also give the hubby's (Isaac's) impressions as well. Just to let you know he' very picky when he comes to his food or as he says he just knows what he likes and doesn't like. Pretty much if he likes the new dish I make then we have scored big time! I'll also make some suggestions in how I plan on improving the recipe the next time I make it. Oh, and welcome to the blog!

On Monday I mentioned that this specific dish was amazing and that you'll get to know more about it on Friday. Well, it's Friday and time for me to spill all the juiciness about this oh so delicious dish!

Spicy Chicken & Cashews


I think I'm on an Asian Cuisine kick lately. Well that probably has to do with the fact that Isaac loves exotic tasting food which makes finding dishes he'll actually eat quite hard. I would say this dish is a happy medium between Isaac's and mine palates. This dish has a good balance of spicy and salty plus the added bonus of being absolutely delicious! Menu Plan Monday 5/27/2013


WHOO HOO! We made it to the second week of this series!!! That's a big deal here since I've started series and then they just fall into a black hole and never resurface. I'm gonna keep this one going strong though, because I actually really like it so far and I have lots of ideas to make it a bit more interesting. For instance like...

Weekly Highs & Lows:
Each week I'll a pick a high (positive) and a low (negative) thing about the meals I planned out for last week. Ok, so let's start with the low because starting with bad news is always easier, at least for me. I would say the low is that I did not end up making the Lemon Chicken & Broccoli. Instead I think we ate Jack in the Box. It was just one of those nights where you are just not going to cook. On the brighter side though, the Tomatillo Salsa Steaks with Baked Fries were amazing!!! Hubby loved it, but you'll get to read more about that on Friday.

Ok, let's see what I'm making this week!


No I'm not making tacos and enchiladas! I'm going to use the chicken from the Chicken Tacos in the Crockpot recipe and add it to the mixture in the other recipe! It's quite delicious!

Menu Plan Monday 5/20/2013



Ok, so I'm starting another series here on the blog!  I think I did something similar to this before, but instead I did it on Sundays. Well, now it's on Mondays and it shall be called Menu Plan Monday! Yea like you couldn't tell that from just reading the title...duh. Anyways each week I'll share what I have planned to make for dinner. So just to let you know, I only plan 4 meals for the week. That is dinner for Monday-Thursday. Friday-Sunday nights we usually eat out for dinner.

Eventually, I may start adding some tips on how to menu plan if you have trouble with that. I would say I've been doing it for about a year now and I honestly love it! It keeps me organized, saves money, and I don't have to constantly answer that dreaded question... What's for dinner? Yes, even though I don't have kids, my husband still asks me everyday. For now though, I'm just gonna start with listing my menu plan for the week with links to the recipes!









Like I said before I thoroughly enjoy menu planning. It honestly just makes the week a little easier. If you are new to menu planning, I suggest you check out Org Junkie! Friday First Impressions: Chicken Arrabiata Pasta

Ok, so apparently I'm subconsciously trying to make my husband like Italian food. I think it may be working.... Last night, I made this Chicken Arrabiata Pasta. So I found this recipe through Youtube. Yep, you read that right... Youtube and not Pinterest. I have a mild obsession with Youtube and I've found a few cooking channels that make really good recipes. Anyways, I figured this would be a good Italian dish to try out on the hubby since it has a spicy red sauce. Pretty much any recipe that is spicy will generally pass the hubby taste test. Alright let's see what we thought about...

Chicken & Peanut Sauce

Have you ever tried Thai food before? Well, if yes then I say this dish is very Thai-esque and if no then I think this is a good place to start! If you have peanut allergies though stay faaaaaaaaaaaaaaaaar away from this recipe. This dish tastes so good I seriously do not know where to start. You have the delicious richness of the peanut butter which is off set by the coconut milk, lime, and spice from the red chili flakes. Ok, I'm gonna stop now before I salivate all over the keyboard.... Alright, let's boogie on into to my kitchen now!

Friday First Impressions: Sun-Dried Tomato and Chicken Pasta


Who doesn't love a good, creamy, cheesy pasta every once in awhile? We generally try to watch our cream and cheese intake, but every once in awhile we just need to indulge. Like most of the recipes I find, I found this one on Pinterest as well. Seriously, that site is sooooo addicting and just makes it easy to find a new recipe to try. Ok, on to the point let's see what Isaac and I thought about this pasta dish!
