Spicy Chicken Thai Noodles

Hello! Sorry it's been awhile since I've done a post. I think it may have only been a week, but that feels long for me. I want to at least get 2-3 posts up here a week, but I'm finding that I'm running out of my tried and true recipes. So now I guess I'm going to start posting recipes that I've only made a couple times, but are still delicious and made for two. I guess  it doesn't matter as long as I still keep posting recipes! Anyways I found this recipe on Pinterest, of course. I have had my fair share of tries with Thai noodle recipes and they never tasted as good as the ones we get at our favorite Thai restaurants. So i followed the pin to this recipe and well it seemed like the easiest recipe for Thai noodles I've ever seen. I told myself if this doesn't work out, then I'm done with trying to make Thai noodles. Yay! It worked out and they are super yummmy!




Spicy Chicken Thai Noodles

Soak time: 30 minutes Prep time: 15 minutes Cooking time: 15 minutes Total: 1 hour
Serving size: Makes 2 BIG servings

Ingredients:

1/2 package of pad thai rice noodles
2 Tbsp crushed red pepper
4 chicken tenderloins
Salt
Pepper
Seasoning salt
Cooking spray
1/4 cup vegetable oil
1/2 cup peanut oil
6 Tbsp honey
6 Tbsp soy sauce
1/4 cup chopped green onions
1/4 cup chopped cilantro
1/4 cup chopped peanuts
1/4 cup shredded carrots
2 Tbsp lime juice

Cookware:
1 large pot
1 colander
1 large cutting board
Kitchen shears
Saute pan
Tongs
Mini chopper or knife & cutting board
Grater
4 small bowls
Small sauce pan
Strainer
Bowl
Whisk
Spoon

Preparation:

1. Soak noodles according to package or for at least 30 minutes in cold water. Drain noodles and water.
2. Cook noodles according to package or fill pot halfway and boil water. Put noodles in boiling water and cook for 5 minutes. Drain and set aside.
3.While noodles are cooking, cut chicken up and season with a few dashes of salt, pepper, and seasoning salt.
4. Spray pan with cooking spray and saute on medium-high heat until cooked thoroughly or around 5-7 minutes. Cover to keep warm.
5. Chop green onions, peanuts, cilantro, and shred carrots.
6. Heat both oils and red crushed peppers over medium heat in small sauce pan for 2 minutes.
7. Strain out pepper and reserve oil in a bowl.
8. Whisk in honey and soy sauce to oil.
9. In large pot, combine noodles, chicken, and sauce until thoroughly and evenly coated.
10. Top each plate with green onions, cilantro, peanuts, carrots, and lime juice. Enjoy!

Notes: 2 Tbsp of red crushed peppers is pretty spicy. We like spicy food so this was perfect for us. I would say it's about a 6-7 out of 10 on the spicy scale. If you are not a fan of spicy food, then definitely use only 1 Tbsp or less of red crushed pepper.

I'm sooo glad this recipe worked out for us because now we can have Thai food from home that's waaaay cheaper than going out to eat and it still tastes good! Anyways hope you try this recipe out and find it just as yummy as we do. Any comments, suggestions, or questions, just leave them below!
