Gather ingredients and cookware.
Cover cast iron pan or large fry pan with tin foil. Heat up on medium
Husk and rinse 4 tomatillos and place on pan.
Roast on all sides for about 5-7 minutes.
If needed, lean the tomatillos on the side of the pan or each other to roast their sides.
Look at how nicely roasted these look!
Add 4 tomatillos, 4 dried red chilies, 1 cup cilantro, 2 garlic cloves, 1/2 teaspoon cumin, and 1/2 teaspoon salt to a blender.
Puree until smooth.
If salsa is too spicy, add 1 tablespoon brown sugar to sweeten up.
Whisk together 2 tablespoons olive oil, 1/2 teaspoon cumin, 1 teaspoon salt, and 1 teaspoon pepper.
Coat steaks with mixture.
Spray grill pan or large fry pan with cooking spray. Heat up on medium.
Place steaks in pan and grill on each side for 4-6 minutes or until done.
Dress steaks with salsa and serve with favorite sides such as Baked Fries. Enjoy!

4 fresh tomatillos
4 dried red chilies
1 cup cilantro

1 tablespoon dark brown sugar (optional)
1/2 teaspoon cumin
1/2 teaspoon salt
For steaks:
3/4 pound thin flank steaks
2 tablespoons olive oil
1/2 teaspoon cumin
1 teaspoon salt
1 teaspoon pepper
Cooking spray
Cookware

I bet it tastes so great, but I am such a wimp when it comes to anything even "kind of" spicy! LOL! So silly since I LOVE Mexican food! Those steaks look amazing! Thanks for sharing and linkin up to Sunday FUNday!
ReplyDeleteHaha that is funny that you love Mexican food, but can't handle spicy. It's ok it took me awhile to get used to spicy food. You could honestly make the salsa without being spicy by leaving out the dried red chilies and adding brown sugar.
