I've realized that the majority of the food I make either has an exotic flavor or nice good kick of spiciness. Well, every once in awhile I'll take a pretty simple dish and add a nice kick to it. This is essentially what I've done with this dish. Now, if you don't care for the kick then you can simply leave it out and I know this will taste just as good. Alright, let's jump into my kitchen!
Lemon Chicken & Broccoli
Prep time: 10 minutes Cook time: 15 minutes Total time: 25 minutes
Servings: 2
Ingredients
2 garlic cloves, minced
1 medium head broccoli, chopped
1 red bell pepper, sliced
3/4 lb boneless, skinless chicken breasts
Black Pepper
Seasoning Salt
1 tablespoon flour
Cooking Spray
1 1/2 cups chicken broth
1/4 tsp red pepper flakes (optional)
6 tablespoons chopped flat-leaf parsley
2 teaspoons lemon zest
3 tablespoons lemon juice
Cookware
Small cutting board
Large cutting board
Knife
Tablespoon
Large skillet with lid
Tongs
Large spoon
Grater
Kitchen shears
Teaspoon
Preparation
1. Mince garlic and chop broccoli and red pepper.
2. Cut chicken into bite size pieces.
3. Season chicken with a few dashes of black pepper and seasoning salt. Add flour and mix into chicken.
4. Spray large skillet with cooking spray and heat on medium-high heat. Add chicken and cook until done or about 5 minutes. Remove chicken to a plate and keep warm.
5. Add chicken broth, garlic, and red pepper flakes (optional) to skillet. Bring to a boil over medium-high heat.
6. While waiting for broth to boil, chop parsley.
7. Add broccoli, cover, and cook for 2 minutes.
8. Add red pepper, cover, and cook for 2 minutes.
9. Remove skillet from heat. Add parsley, zest lemon over entire pan, slice lemon and squeeze lemon juice over pan.
10.Add chicken back to pan and mix everything together well. Serve over rice and enjoy!
