Today we are making the third course in 3 Course Valentine's Dinner for Two! I can't believe we already on the third course. This week just flew by quickly! Tomorrow will be the last day in the series and I'll be sharing all the tips and tricks you need to know in order to make all three courses and serve them. Red Velvet Cupcakes for Two with Cream Cheese Icing | Table for Two, please?

Gather ingredients and cookware.

Oven at 350F | Table for Two, please?

Preheat oven to 350.

Melted butter | Table for Two, please?

Melt 2 tablespoons of butter in a small bowl in the microwave for 30 seconds. If not fully melted, keep melting in 30 second increments until fully melted.

Wet ingredients | Table for Two, please?

Add 1 egg white, 2 tablespoon melted butter, 1 1/2 tablespoon milk, few drops red food coloring, 1 teaspoon vanilla, 1 tablespoon vegetable oil, and splash white vinegar to a small bowl.

Wet ingredients mixed | Table for Two, please?

Whisk everything together.

Dry ingredients | Table for Two, please?

Add 2 tablespoon sugar, 1/4 cup flour, 1/4 teaspoon baking powder, pinch salt, and pinch cocoa powder to a large bowl.

Mix everything together.

Wet and dry ingredients | Table for Two, please?

Add the wet ingredients to the dry ingredients.

Mix everything together.

Liners in pan | Table for Two, please?

Place liners in the middle of the tin.

Fill the liners with the cupcake mix.

Cupcakes after 15 minutes with toothpick | Table for Two, please?

Bake for 15-20 minutes or until baked completely. Here the cupcakes have baked for 15 minutes. I stuck a toothpick in the middle of the cupcake and the toothpick came out with batter meaning the cupcakes need to bake longer.

Here the cupcakes baked for another 5 minutes and the toothpick came out clean meaning all done!

Cupcakes cooling | Table for Two, please?

After a few minutes, remove the cupcakes from the tin and place on a cooling rack. Let the cupcakes cool completely or about 4 hours.

While the cupcakes are cooling, let's move on to make the icing.

Ingredients | Table for Two, please?

Gather ingredients and cookware.

Softened butter and cream cheese | Table for Two, please?

6 hours before take out butter and cream cheese to soften.

Everything in bowl | Table for Two, please?

Add 4 tablespoon softened butter, 6 ounces softened cream cheese, 1 1/2 cups powdered sugar, 1/4 teaspoon vanilla, and dash salt to either a stand mixer bowl or large bowl.

Mixed after first time | Table for Two, please?

Mix everything together for about 1-2 minutes either in a stand mixer or with a hand mixer. See how there is still powdered sugar on the sides?

Scraped sides | Table for Two, please?

Make sure to scrape down the sides to ensure everything mixes together.

Mix everything together one last time.

*Quick tip* If you want a harder icing, than refrigerate your icing for a couple hours to harden.

I love this recipe because it makes the perfect amount of cupcakes for two people. Now, you can enjoy a sweet treat in moderation. Tomorrow I will be finishing up the series by sharing tips and tricks on how to pull off the entire 3 courses.

Red Velvet Cupcakes for Two


Prep time: 10 minutes Bake time: 20 minutes Cooling time: 4 hours Total time: 4 hours 30 minutes

Ingredients

2 tablespoon melted butter
1 egg white
1 1/2 tablespoon milk
Few drops red food coloring
1 teaspoon vanilla
1 tablespoon vegetable oil
Splash white vinegar
2 tablespoon sugar
1/4 cup flour
1/4 teaspoon baking powder
Pinch salt
Pinch cocoa powder

Cookware

2 small bowls
Large bowl
Tablespoon
Teaspoon
1/4 cup
Whisk
Spatula
Muffin tin
Cupcake liners
Toothpicks

Preparation

1. Preheat oven to 350F.
2. In a small bowl, melt 2 tablespoon butter in the microwave for 30 seconds.
3. In another small bowl, whisk together 1 egg white, 2 tablespoon melted butter, 1 1/2 tablespoon milk, few drops of red food coloring, 1 teaspoon vanilla, 1 tablespoon vegetable oil, and splash of white vinegar.
4. In a large bowl, mix 2 tablespoon sugar, 1/4 cup flour, 1/4 teaspoon baking powder, pinch salt, and pinch cocoa powder.
5. Add wet ingredients to dry ingredients and mix together.
6. Line a muffin tin with 2 liners and fill each liner with cupcake batter.
7. Bake for 15-20 minutes or until baked completely. I check this by sticking a toothpick in the center of the cupcake and pull it out. If it comes out clean, they they are done. If it does not come out clean, then they need to bake longer.
8. Let cool completely or for around 4 hours and then frost. Enjoy!


Cream Cheese Icing


Prep time: 5 minutes Mix time: 5 minutes Total time: 10 minutes
Servings: 2

Ingredients

4 tablespoon butter
6 ounces cream cheese
1 1/2 cups powdered sugar
1/4 teaspoon vanilla
Dash salt

Cookware

1/2 cup
Teaspoon
Stand mixer bowl or large bowl
Stand mixer or hand mixer
Spatula

Preparation

1. Take butter and cream cheese out of fridge to soften for around 6 hours.
2. Add 4 tablespoon softened butter, 6 ounces softened cream cheese, 1 1/2 cups powdered sugar, 1/4 teaspoon vanilla, and dash salt to either a bowl or stand mixer bowl.
3. Beat well either in a stand mixer or with a hand mixer until smooth or for about 1 minute. Make sure to scrape down the edges of bowl to ensure everything is mixed. Enjoy!
