Chicken Tacos in the Crockpot
Prep time: 15 minutes Cook time: 6 hours Total time: 6 hours and 15 minutes
Servings: 9 tacos
Ingredients
2 1/2 Tbsp Taco seasoning*
15 oz LOW SODIUM chicken broth
1 14.5oz can diced tomatoes and liquid
4 boneless skinless chicken tenderloins
Cilantro**
Lime**
Red onion**
Corn tortillas

*Note: I used a homemade taco recipe which I'll share below or you can use store bought.
**Note: These are the ingredients I used for our taco toppings. You can try these out or use your favorite toppings.

Preparation
1. If you need to, mix together your seasonings for the taco seasoning.
2. In a large bowl pour the chicken broth in and use a whisk to mix in the taco seasoning.
3. Spray the slow cooker with non-stick cooking spray.
4. Open the diced tomato can and pour all contents over the bottom of the slow cooker.
5. Lay the chicken breasts on top of the tomatoes and season the chicken with a few dashes of salt, pepper, and seasoning salt.

6. Pour the broth/seasoning over the chicken and tomatoes.
7. Cover and cook on LOW for 6 hours.
8. Use a slotted spoon to remove the cooked chicken to a large bowl and use 2 forks to shred it up.
9. Use the slotted spoon to remove as much of the diced tomatoes out of the slow cooker as desired and add to the shredded chicken.

10. Then grab a large spoon and add about 4-6 spoon fulls of the liquid from the slow cooker to the shredded chicken bowl and stir it all up!

Taco Seasoning Recipe
Ingredients
1/2 tsp chili powder
1/4 tsp cumin
1/8 tsp garlic powder
1/8 tsp onion powder
1/8 tsp cayenne pepper
1/8 tsp oregano
1/8 tsp paprika
Salt a few dashes
Pepper a few dashes
1/4 tsp cumin

12. Prepare taco toppings, if needed.
13. Place chicken in tortillas and add your favorite taco toppings. Enjoy!
