Healthy Pasta with Chicken & Veggies

Hi! Back with a new recipe! I honestly can't remember how I came across this recipe, but I'm sure glad I did. This pasta dish is "healthier" because the sauce is Greek yogurt, low-fat milk, and cheese. I really only changed the vegetables I used, the amounts of each ingredient, and I added chicken. Healthy Pasta with Chicken & Veggies


Prep Time: 15 minutes Cook Time: 30 minutes Total Time: 45 minutes
Servings: 2 portions plus leftovers

Ingredients

1/4lb or 4 oz whole wheat spaghetti
1 zucchini cut into small spears
1 broccoli frozen or fresh cut into bite size pieces
1 red pepper cut into strips
10 baby carrots sliced
2 cloves garlic minced
4 chicken tenderloins
Salt
Pepper
Seasoning Salt
Cooking Spray
1 Tbsp Olive oil
½ cup milk
½ cup grated Parmesan cheese
6 oz low fat plain Greek yogurt

Cookware

1 big pot
1 large cutting board
Knife
Kitchen shears
2 saute pans
Tongs
Spoon
Tablespoon
1/2 cup measuring cup
Colander
1 big bowl

Preparation

1. Boil the water for your pasta according to the package.
2. Set out your yogurt and allow it to come to room temperature.
3. Dice up your veggies.
4. Cut chicken into bite size pieces.
5. Season with a few dashes of salt, pepper, and seasoning salt.
6. In a saute pan, spray with cooking spray and cook chicken until done or about 5-7 minutes. Set aside to stay warm.
7. After prepping your veggies gently saute them in the olive oil and garlic for about 3 minutes or until just barely cooked. Turn off heat and cover to keep warm.
8. Once your water is boiling, cook your pasta per the instructions on the box. Drain once done cooking.
9. In another saute pan add your milk and allow it to get very hot or slightly boiling.
10. Add the grated cheese and mix well, turn the heat down to low and allow the mixture to reduce slightly for about 3 minutes.
11. In the same pot you boiled the pasta, add your pasta, the Greek yogurt and the milk/cheese mixture. Toss this all together to blend well.
12. Then add veggies and chicken and stir until blended all together.
13. Plate, add more cheese if you want, and enjoy!
