Scrumptious Sunday Shopping No. 1
Hello! So I've decided to start another series here on my blog. As you can see, I've titled this series Scrumptious Sunday Shopping! So, every Sunday I do my meal planning and grocery shopping for the entire week. This allows me to only buy what we need for the week and not have to make several trips to the grocery store throughout the week. I've been doing this process for several months and not only has it saved me time, but we have saved money, as well! In this series, I will include a little snap shot of what we bought at the grocery store and also include my menu plan for the week. So let's see what we bought this week and what I plan on cooking this week for dinner!

Hello everyone! Ok, so instead of giving a sorry excuse why I haven't blogged in two weeks, I'm just gonna ignore that and jump right in. I will say that I've noticed I've been rotating a lot of the same recipes lately so I'm just going to start posting what we ate each week even if I've cooked it in the past. I may even start taking pictures of the food I eat when we eat out. This just allows me to post more pictures and hopefully do these posts more consistently. Hi! Ok, so I know I have been MIA for probably 2-3 weeks. Sorry. School and life have been crazy busy lately. It's been so busy that I haven't felt like cooking that much. Ahhhhhh! I know, but I've literally been so tired we've been eating out more than usual lately. I still have a few pictures of what I cooked over the past few weeks. Food for Two Pictures
Hello everyone! So it has definitely been a couple weeks since I've posted. Sorry for the absence, but I'll explain. Well I've started school and that literally takes the majority of my time. I'm either in class, at the hospital, or studying non stop. So it has been hard for me to find time to make new posts. I'll hopefully be able to find time for at least one post a month.
So I was thinking what is something easy and food related that I could post once a week in the mean time? I guess I got the inspiration from other beauty blogs. Yes, I do read plenty of beauty blogs and watch a many beauty gurus on YouTube. It's like my little indulgence. Anyways, some of the gurus will do posts where they put up their past week Instagram pictures. Well I figured I could do the same thing, but instead all my pictures will be of the food and dinners that I made that past week. So, I'm gonna do this each week until I can post more recipe posts and who knows I may just keep it up! Ok, so let's get onto last week's pictures!

Crock Pot Orange Chicken
Hi everyone! So I'm sorry I slacked on getting that recipe up on what to do with the leftovers from the healthy burritos. I'll try to get that up later this week. In reality, I need to set myself a schedule up for this blog, but it's been hard since I'll be starting school again soon. I'll hopefully figure that out in the near future. Anyways on to the new recipe.
Ok, so this is going to be the first flub on this blog. It's ok plus everyone makes mistakes and I think we should learn from our mistakes. In this case, I made something my husband didn't like. He didn't like it so much that after I finished enjoying it we had to go to Subway to get his dinner. Yea this wasn't the first time this has happened to me. Trust me in the first few years of marriage, it takes time to know what your husband likes and dislikes as far as food. Even though my husband didn't enjoy it and I had already taken all the pictures, I'm still going to share the recipe with you. So once again I found this recipe on Pinterest, what else is new!? The pin took me here and I thought it would be something my husband and I would enjoy. Boy, was I wrong! The recipe is extremely easy and I enjoyed it. Trust me my husband is an extremely picky eater so don't let that stop you from trying this recipe out!

Healthy Burritos
Hi everyone! So I'm back with another recipe this week. I bought this book and found this recipe inside. I tried the original recipe, but Isaac and I thought it was a bit too healthy for our liking. So I adapted the recipe to our tastes and made it just a tiny bit unhealthier than the original version. To be honest though, I think it's healthier than most burritos especially the ones from taco shops or Taco Bell. We tend to have leftover meat from this so I'll be doing another post this week to show you an easy lunch with the leftover meat!

Spicy Chicken Thai Noodles
Hello! Sorry it's been awhile since I've done a post. I think it may have only been a week, but that feels long for me. I want to at least get 2-3 posts up here a week, but I'm finding that I'm running out of my tried and true recipes. So now I guess I'm going to start posting recipes that I've only made a couple times, but are still delicious and made for two. I guess it doesn't matter as long as I still keep posting recipes! Anyways I found this recipe on Pinterest, of course. I have had my fair share of tries with Thai noodle recipes and they never tasted as good as the ones we get at our favorite Thai restaurants. So i followed the pin to this recipe and well it seemed like the easiest recipe for Thai noodles I've ever seen. I told myself if this doesn't work out, then I'm done with trying to make Thai noodles. Yay! It worked out and they are super yummmy!

Pepperoni Pizza Rolls
Ok so who doesn't love a good, greasy pizza every once in awhile? I know we definitely do. I originally found this recipe on Pinterest and followed it to this site. The recipe is suuuuuuuuuper easy and extremely tasty. The first time I made these I bought the wrong biscuits and we decided to add more pepperonis, but other than that I kept the recipe the same. I tried this to see if Isaac would eat these for lunch and sure enough he enjoyed them. They also reheat really easily and still taste just as good. I think this would make a great lunch or snack for kids and of course grown ups!

Chicken & Black Bean Taquitos
So I came across this really awesome site called onceamonthmom.com. I can't remember if I came across it on Pinterest or just through a Google search. Anyways this site is really dedicated to freezer cooking and making practically an entire month's worth of food in one big cooking day. I was interested in trying it out, but my husband and I like our food to taste fresh. We don't even like to eat leftovers. I still check the site out because most of their recipes you can still use, but just skip the whole freezing part. Well I came across this recipe and I knew I could use it and skip the freezing part. This has now become a favorite of my hubby's and mine. Ok so here's how you make these tasty Chicken & Black Bean Taquitos!

Chicken & Vegetable Stir-Fry
Yuuuummmmmmmmm! Chinese foooood! My husband is from Mexicali, Mexico where there is some amazing Chinese food. It's weird, but it's sooo true. We actually crave that Chinese food quite often. Anyways, I found this recipe and for us it's good. Trust me it does not compare to the Chinese food in Mexicali, but it's still tasty and makes a good dinner. I found this recipe here. I only changed what types of vegetables I put in the stir-fry. Ok so here's how to make it!

"Healthy" Baked Mozzarella Sticks
Hi! So I'm back with another recipe. I realized as I was making these that this is pretty similar to my last recipe. Oh well. Anyways, I normally don't make appetizers for us except if we have people over or if I'm taking something to a party. So we had people over last Friday night to watch a movie and hangout. We were planning on having pizza for dinner so I decided to make "Healthy" Baked Mozzarella Sticks. I found this recipe on skinnytaste.com and there are tons of other great recipes! Check it out! Obviously this recipe is a bit much for just two people, but you can always reduce the amounts to make just the right amount for your family.

Breaded Baked Chicken
Yay! It's my first recipe. Ok, so this recipe has seriously become a staple in our household. I have perfected this recipe to at least the flavors that my husband and I enjoy. Trust me it is very rare that I make a recipe for the first time and it comes out REALLY good. It usually takes me a couple times before I get it just right for our tastes. Anyways, I adapted my recipe from a recipe called Baked Chicken Cutlets in this book. The changes I made were pretty much the measurements of the ingredients. So this recipe is a simple breaded chicken recipe except it's baked instead of fried. I usually like to serve this with rice and corn, but you can serve it with whatever your family enjoys the most.

Welcome to Table for Two, please?
Hello! My name is Katrina and I'm happily married to my wonderful husband, Isaac. This October we will have been married for 2 years! The past two years have been wonderful and I can say in a marriage you are always learning new things. A thing I have learned through tons of trial and error is how and what to cook for my husband. He is quite the picky eater and like anybody else loves tons of flavor in his food. I feel I have learned quite a few things and definitely improved my cooking skills (of course there is always room for improvement). Hence, why I am starting this blog.
So why am I starting a food blog?
There are several reasons why I decided to start this blog. One is that I LOOOOVVEE cooking and baking! I grew up with my mother always cooking and baking all the time. She actually has her own cake business. I learned a lot of my techniques by just watching her and cooking with her in the kitchen. Another reason is that I feel that I have information for people that didn't grow up with a mother who was cooking all the time. I feel that almost anyone can cook, but they just need to know a few tricks and have proper instructions.The last reason is because when I'm searching for recipes I usually find ones that are for at least families of four. Well at the time being, it is only my husband and I. In the very distant future, I know this will change, but not right now. Anyways, I'm always having to adapt recipes for just us. I feel I have mastered this and want to offer our favorite recipes that work perfectly for just two people.
What are my goals for this blog?
Ok so I want to be able to offer my tips and tricks I have for cooking. I also want to be able to provide recipes that are made for two, obviously, but of course can easily be made for more. Sometimes I find when I'm looking at recipes, the instructions aren't always clear and sometimes confusing. If I'm confused, then I know for sure people who don't cook very often would be confused as well. I hope to be able to offer very detailed instructions and give step by step pictures to make it even easier. In reality, I just want to share my recipes for the world so they can cook a good meal for their families no matter how small or big.
So pretty much welcome to my blog and I'm super excited to start this up! I'm not sure yet when I'll post again or what it will be about. I haven't figured out a schedule quite yet and I need to see how long it's going to take to put a full recipe post together. If you have any suggestions about what I should post next, let me know in the comments!
